I am SO excited about my upcoming demonstration class! Local PA winery Pinnacle Ridge will be on hand to help educate my students about wine and grapes in the Pennsylvania area. I will be teaching a French Wine Taster Dinner Class Thu, Sept 18, 7-9 PM - DEMOS133.(2) at NCC Fowler Center and I am excited to share that Wime Educator James Bungert from Pinnacle Ridge Winery will be there throughout class!  These cannelloni were a lot fun to make. I started with the sauce, with it's base of San Marzano tomatoes and cooked it until thickened. I cooked the liners crepe style and then prepared the ricotta filling. The rest was easy. Fill. Roll. Repeat. Baked it and voila! Delicious! 
Parmesan Twists made with homemade puff pastry. Wonderful as an appetizer or served along with fresh cannelloni and salad.
