I adore lemons! Their bright, well, lemon color, makes me happy. I love how lemons are so versatile. Our home is never without lemons. I use them in my drinking water. I use them in main dishes and desserts. I squeeze a splash of lemon into sauces to balance flavors and make flavors pop. I like to grate lemon peel, dry it and add it to salt to make homemade lemon salt. I like to have a bowl of lemons on the counter to cheer up a blustery day. Lemons are classic with spinach, scrumptious with dark chocolate and fabulous candied. Try placing a halved lemon into the cavity of a chicken before you roast it in the oven. The chicken will take on a fresh, citrusy zing that only a lemon can give. Try grating some zest into your favorite shortbread or sugar cookie recipe to change it up and make it new. Use the entire lemon, always. Remember, roll it, zest it, juice it, put it in the compost OR down the disposal to freshen your sink. See? Anyway you slice them, lemons are full of goodness!

In colder weather, I throw citrus peels into a pot of water on the stove to simmer during the day (as a humidifier) then turn it off before dinner and when the water cools and use it to dampen a cloth to wipe out the microwave. I love the subtle fragrance.
