Father’s Day is coming so it’s time to make way for daddy! What to do? What to do? Prepare to be prepared to make their favorite foods of course! Honestly, Dear Readers, I cannot believe you didn’t think of that! My husband Russell’s favorite foods include most anything he can drink beer while cooking. I know what you’re thinking, it’s nearly summer, it’s hot outside and men are not that difficult to please. Again I ask, what to do? Easy! One word, barbecue. Barbecue and dads go together like, well, dads and barbecue. The resident dad in our home barbecues wonderful chicken. I thought I would harvest some salad greens and peas from the garden and also corn on the cob with a spicy, lime butter. For dessert? A chocolate torte and chantilly cream. Yum right?
To make easy, and more importantly, delicious barbecued chicken: Cut the backbone from the chicken and freeze for stock. Carefully cut the cartilage in half and flatten the chicken. Rub the chicken all over with oil and season well with salt and freshly ground pepper. Barbecue while monitoring how much beer your hubby drinks (too much beer is when they are unable to make your favorite drink.) Serve when the internal temperature of the chicken registers 165° on a culinary thermometer. Squeeze a lemon over the top of the chicken before serving if you like. It’s yummy.
