I woke up with a craving for donuts but did not want to fry anything or deal with rising time. That means baking the donuts but I do not own a donut pan. I wanted to use the boiled cider I made a while back and hope for an authentic donut look. Necessity is the mother of baked apple cider donut muffins, Dear Readers. The bake was quick and the fail semi epic but the flavor and texture is yummy. I made some changes to a recipe I collected from the internet and used aluminum foil to create the donut look but would advise against going to that trouble. Just grease a nonstick standard muffin tin and dip in the cinnamon glaze while the muffins are warm. I added a bit of cake flour to the recipe and increased the cinnamon and nutmeg. I decreased the baking time. I also drizzled whatever glaze was leftover from dipping over the tops. Craving satisfied. You’re welcome.

Just in case any of you wish to go for an authentic donut look, I wrapped strips of aluminum foil around my index finger and flattened the bottom. I greased both the foil and tin. I made a hole after filling the tins and fit the round foil in; but, the batter baked around the foil. I could have punched the bottom to make a hole but was hungry.
