If you have not heard, Dear Readers, another storm is headed toward the East and destined to slam into us later this evening. This latest nor'easter should/could drop as many as 11"-13" of snow! What the what? What to do? What to do? Cook Greek food, of course! How else to cheer a cold evening but by tapping into my island heritage for sunny inspiration?
For dinner tonight my family and a few friends will indulge in crispy veggies with homemade Spinach Dip and then feast on salad with freshly made herb dressing and Pastitsio, served family-style. I made an Herb Biscuit Bread (from my cookbook) and garlic bread too, to make certain there is enough food and make my Greek relatives both proud and happy. (Wink. Wink.) We will have chocolate cupcakes for dessert and possibly ice cream. If this sort of homey meal does not keep the "I wish is was Spring and NOT winter blues" away, I don't know what will.
