Last night was electric! We had lightning and thunderstorms followed by heavy rain and high winds. As rain and wind lashed our windows, I slept. As lightning and thunder lit up and boomed, I slept. When all was still and peaceful with only chirping crickets? Yep, wide awake. What to do? What to do? Count dishes, not sheep to lull myself back to sleep. So, instead of tossing and turning, I create menus and recipes and apparently blog. I guess it works because I’m sleepy again. Yay! Try it, Dear Readers. Next time you cannot sleep, dream up menu and recipe ideas until you can. You might wake up hungry but you will wake up ready to get cooking.
Today is cloudy and mild outside and I am inspired to create something creamy, a little spicy and hearty. A hummus bowl with ground beef and something seasonal like tomatoes will be delicious. I will make a chewy, herby homemade focaccia to serve along with it and of course there is refreshing local beer to wash it all down. I think this combination will be just right for a day like today, what about you, Dear Reader? This sort of meal speaks to me and says, ‘there’s no place like hummus.’
