Today I prepared several dishes of different dishes. I made Tiropita and multiple dishes of Spanikopita. I made up a dessert of poppyseed filling we brought home from Germany. I added confectioner’s sugar and blood orange marmalade a friend made as well as a splash of Cointreau and a pinch of cinnamon. Yum.
All the dishes got assembled, sliced wrapped and frozen.
I made chicken breasts slathered with a combination of German mustard, fresh chives and mayonnaise dredged in panko breadcrumbs, stuffed with cheese and topped with ham. I also made frittata and served it with an organic spinach salad to share with a friend for lunch. My lovely friend made me a sweet pastel to show me she cares. I got to spend a morning creating for my cuties and besides filling the tummies of loved ones, I fed my soul.
